Chef Nay’s Guiltless Cookies Chocolate Chunk

  • 2 ¼ cups all-purpose flour
  • 4 oz dark chocolate bar
  • 1/4 cup coconut milk
  • 1/2 cup coconut oil, solid
  • 1 ¼ cups light brown sugar
  • 1/4 cup unsweetened applesauce
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • ½ teaspoon salt


  1. Preheat oven to 275°F. Line a large baking sheet with parchment paper.
  2. Whisk together the coconut oil, brown sugar, and vanilla in a large bowl. Beat until combined. Add in the coconut milk and applesauce and whisk until together.
  3. In a separate bowl, stir to combine the flour, baking soda, and salt.
  4. Next, carefully cut the chocolate bar into chunks using a knife and set aside. The chunks should be no larger than the fingernail on your pinky finger.
  5. Add the dry mix to the wet mixture, stirring until ingredients are combined. The batter will be thick! Fold in the chocolate chunks.
  6. Scoop two tablespoon sized mounds of dough onto the prepared cookie sheet, leaving a few inches between each cookie.  Bake for 22 to 25 minutes. The edges should be golden brown
  7. Cool cookies on the baking sheet for 15 minutes before transferring them to a serving plate.
