Chef Nay’s Citrus Roasted Beet Salad

Yield: 2 servings | Prep Time: 10 mins

• ½ yellow bell pepper, thinly sliced
• 2 medium radishes, thinly sliced (stored in lemon water)
• 1 head Boston butter lettuce
• 2 medium beets, citrus roasted and diced
• 1 recipe grapefruit vinaigrette

1. Assemble the salad in a medium bowl, placing the lettuce leaves on the bottom and beautifully arranging the toppings.
2. Drizzle the vinaigrette over the top and serve immediately.
